Vegan Mac n Cheese
Ingredients:
1 carrot
2 yellow potatoes
Choice of pasta
Choice of pasta
White onion wedges
½ cup of raw cashews
½ cup of raw cashews
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
2 tsp nutritional yeast flakes (optional)
1/2 tsp paprika (optional)
Steps:
1. Peel potatoes and cut into one-inch cubes. Boil for two minutes.
2. Peel carrot, chop, and add to the boil. Boil both potatoes & carrots for 5 minutes.
3. Add onion wedge and boil for 7 more minutes (or until soft).
4. Remove vegetables from the water but keep water for later.
5. Now blend together cashews, 1.5 cups of the water from the vegetables, the vegetables, and seasonings of your choice.
6. Pour the sauce on top of the pasta.
